Avocado Fries


Craving something crunching, yet smooth and creamy on the inside? These are perfect!! Like many, my avocados go from hard-as-a-rock to ripe immediately (or so it seems). I had six avocados that were ripe and didn't know what to make. Then I thought, why not try to make a high-protein, crunchy avocado fries? In my world, nothing is impossible!


Let's get baking you'll need:


Avocados sliced and patted dry.

1/2 cup panko bread crumbs

1 scoop protein powder

1/2 tsp everything bagel seasoning

2 eggs beaten for an egg wash

1/4 tsp garlic powder

1/8 tsp oatmeal

2 tbsp olive oil


You're going to make a "coating station" minus the flour. Dip the avocado slices in the egg then coat in the dry protein breadcrumb mixture. (remember the rule, one hand wet and one hand dry. It never fails, the phone will ring or the doorbell will chime when your hands are yucky- culinary term)


Put the coated avocado slices on a baking sheet that is sprayed with olive oil. This will make them crispy and golden brown. A whole medium avocado contains about 240 calories, 13 grams carbohydrate, 3 grams protein, 22 grams fat (15 grams monounsaturated, 4 grams polyunsaturated, 3 grams saturated), 10 grams fiber, and 11 milligrams sodium. Along with their low sodium levels, avocados contain no cholesterol.


Bake in a 400-degree oven for 8 minutes and finish them in a 450-degree oven for the last 2 minutes. That makes a total of 10 minutes for baking. You may need to turn them halfway through the baking.


Any dipping sauce would work but I'm saving calories and use Walden Farms Zero Calorie Honey Mustard. It was a perfect combination!
