High Protein Apple Crisp
Looking for a high protein breakfast that will remind you of a crisp fall day? On this hot Spring Day in NJ, with temperatures going to soar over 80 degrees, what better time than to think of Fall?
This recipe I saw on social media and thought, how can I make this high protein and taste good? That’s when I took out all the ingredients that play well together. That would be apples, cinnamon, brown sugar (I used Brown Sugar Splenda), oats, oil (I used avocado oil), protein powder, collagen powder and vanilla (although almond extract would be yummy too).
This came together in less than 10 minutes and was so good.
Let’s put this together, you’ll need:
1 apple chopped (skin on)
1 tsp cinnamon
½ tsp cornstarch
2 tsp brown sugar Splenda
¼ tsp sugar free maple syrup
½ tsp vanilla
½ cup quick oats
A dash of salt
2 tbsp avocado oil
1 scoop protein powder
1 scoop collagen powder
1 Greek yogurt (optional for topping)
In a microwave dish (I used a plastic container, this breakfast was on the move), add chopped apple, cornstarch, and SF maple syrup. Microwave on high for 1 minute. Stir well and set aside.
In a bowl add oats, protein powder, collage powder, cinnamon, and oil. This will make a “mock crumble” for the apples. Spread evenly on the apples and microwave for another minute. This will be hot, be careful.
Allow it cool and top with Greek yogurt or SF whipped topping.
High protein, sweet and crunchy. That checks off all the boxes for me!
With 63grams of protein for 350 calories, this is a wonderful way to start your day!
